Chicken Stir Fry With Vegetables

Chicken stir-fried with garlic, white onion, bamboo shoots, and spring peas. Perfect on its own or served over cooked Chinese long grain white rice.
Ingredients -
2 pieces of Chicken Breasts, sliced into ¼” slices
1 whole Red Bell Pepper, halved, de-seeded and cut into strips
1 small White Onion, sliced
1 bunch Bamboo Shoots
1 bunch Mangetout (or Spring Peas)
1 Whole Garlic Clove, chopped
1 tablespoon Peanut Oil
 
Preparation:

1. Preheat wok over medium high heat.

2. Add 1 tablespoon peanut oil and chopped garlic to wok. Stir-fry 30 seconds.

3. Add chicken to wok. Stir-fry 2 minutes, or until chicken is cooked almost through.

4. Add remaining ingredients. Stir-fry until vegetables are crisp tender.
