Beef And Broccoli

Marinated flank steak, stir-fried with bell peppers, straw mushrooms, and broccoli. Perfect Chinese menu entree.
Ingredients -
1 pound Flank Steak
2 Red Bell Peppers, stemmed, seeded and cut into strips
1 cup canned Straw Mushrooms, rinsed and sliced
1/2 pound Frozen Broccoli, thawed and drained

Marinade:
2 tablespoons Dry Sherry or Cooking Sherry
2 tablespoons Soy Sauce
1 teaspoon minced Ginger
1 Green Onion, chopped

Other:
1 Clove Garlic, chopped
1/2 cup Beef Broth
1 tablespoon Cornstarch mixed with 2 tablespoons Water
1 teaspoon Granulated Sugar
4 tablespoons Peanut Oil for stir-frying, or as needed

 
Preparation:

1. Cut meat across grain into slices.

2. Combine flank steak with dry sherry, soy sauce, ginger and green onion in large bowl. Toss to coat. Let stand 20 minutes.

3. Heat wok over medium high heat. Add oil and heat to almost smoking.

4. Add garlic and stir-fry 30 seconds.

5. Add beef and stir-fry 3 minutes or until nearly cooked through. Push to the side.

6. Add 1 tablespoon oil to center of wok. Add broccoli. Stir-fry 30 seconds. Add mushrooms, and red bell pepper.

7. Add beef and cornstarch mixture. Stir to thicken. Sprinkle sugar over top.

8. Combine all ingredients and serve hot with white rice.
